I'm a NYC snob in the biggest way, but Chi definitely gets the nod here. David Burke has a great vibe, and the 75 day dry aged is amazing. Joe's in Chi is pretty great as well. If not Chi, El Gaucho in Aruba has a pretty amazing Argentian steak.
If you want to cook at home you need a sous-vide and a torch.. Assuming you want the best.

True, but all of Chi's meat is corn fed in lots. The corn that they're fed is gmo, roundup proof corn. The best beef in America today is probably Uruguayan, because even the Argentines are doing the gmo corn food lot stuff right now.
You can order Estancia Uruguayan meat online. Expensive, yes, but at least I know I'm not eating antibiotics, hormones and roundup.

Steroid hormones and antibiotics are reasonable concerns. Growth hormone does not matter.
GMO and the cow's food means jack to humans as long as it doesn't cause an infection that becomes encysted in the meat.
The body can break down any protein into individual di and tri pepdide before it is absorbed. It's one of the reasons mad cow is unproven bullcrap (no pun intended).

Morton's and Ruth's Chris are usually good, but I prefer non-chains. Standouts I've had are Fleur De Lys (Hubert Keller), Chateaubriand and Beef Wellington by the wife, and an organic filet at some random place in Costa Rica. I've also had Kobe Beef Carpaccio before and would have murdered someone for more. Can't even imagine how good a full Kobe steak is. Anyone had one?
In Jax we just had our Morton's close and I think they've closed a few other locations. There are probably 5+ places within a 5 mile radius of that location where you can get a better steak for cheaper with a better atmosphere. Doubt it will be missed.
Definitely plan to hit Peter Luger's this summer. I'll probably be staying in Williamsburg, so it would be stupid not to.

But, the benefit of eating free range, grass fed is the higher Omega 3's and lower Omega 6's.
I actually changed my diet drastically in March 2011, no fast food and only pastured meats. Cholesterol - LDL's dropped and HDL's went up. The only change was pastured meats and no fast food. And, we're talking about a significant change. Exercise, tennis, yoga, and weight training remained exactly the same.
